You can insert a photo of me throwing a temper tantrum right now if you would like. I just have to get this off my chest…..I am so tired of living in a house where everyone is so picky. Based on the dislikes of everyone in my family I have stopped cooking foods that I enjoy eating. Part of that is because of my lack of self control. 😀 Once I make something I like there tends to be no one else around who likes it so I eat the entire thing all by myself. Please tell me I am not alone!
My mother-in-law comes twice a year (for each of the girls’ birthdays….there’s a fun Crafty Tuesday post coming tomorrow!) and she inspires me to cook more. It may not feel like much of a vacation for her since she tends to cook us dinner more nights that not. After she leaves I get my cooking pep back. But today I wanted to make something we both enjoy – Pasta Salad. Oh, that’s right, out of four people in my household I am the only one who likes Pasta Salad. How is that even possible?
The selection of pasta at Walmart was sparse, but I had some Ronzoni Garden Delight pasta which was a money maker at Publix last week at home. I picked up the rest of simple ingredients for Pasta Salad and quickly made it. I forgot how simple it is to make pasta salad. It is quick and yummy. Those are both perks in my book! I love that the Garden Delight pasta is made with veggies. It totally reminds me of Veggie Straws, which are very popular in our house. As with spaghetti, pasta salad is best served the next day and we are going to have a scrumptious lunch!
One of my goals this year is to make a new recipe each week. I think I am going to add to that to cook something that I like on occasion too! What are some of your favorite foods that are super easy to make?

One of the ways I get my girls to eat more, I let them do the picking out. We will go to the veggie section (I do this individually… ) Today Is Becca’s day to pick veggies. So she goes around and picks the veggies to go into our pasta salad. Then they help me make the pasta salad to show off to the other family members.
I don’t know if that will work for you, but it seems to make my life a bit easier. Good luck!
What a great tip Jen. Thank you! My girls actually like veggies all by themselves, but when you mix them or put sauce on them they freak out. I wonder if they would do better with a lot of control?
