Healthy Spring Recipe: Bunny Salad

Are you looking for a fun new recipe this spring?  How does Bunny Salad sound?  A huge thanks to This Mama Loves Her Bargains for this idea!  She recommends using Cottage Cheese, but I think it would be great with Greek Yogurt (especially since I have one daughter who thinks cottage cheese is disgusting, but doesn’t mind greek yogurt).

It’s always fun to create yummy and fairy healthy desserts with kids who love to be in the kitchen.  This recipe may even pull in the kids who like, but don’t quite love, cooking.

Bunny Salad. Combine the following ingredients and chill.

• 3 C cottage cheese
• 2 T honey
• 3 T lemon juice
• 1/4 C raisins
• 1/2 C chopped nuts
• 1T poppy seeds
• 2 Medium tart apples diced

Additional Extras – Just for fun

• Peaches
• Pears
• Seedless grapes
• Orange sections or mandarin oranges

Serve as a salad or side dish, or enjoy with some crackers!! Delicious and nutritious!
